Easy eMeals Weeknight Breaded Baked Chicken Recipe + Keto Option

Whether you’re a working mom or a stay-at-home mom, I’d venture to guess that you’re pretty wiped out by the time dinnertime rolls around. In the past I’d often resort to frozen pizza, convenience foods, or eating dinner out. (You’ve got to feed the kids something, right?) Over the years I’ve learned that if I make a meal plan on the weekend and get groceries to make it happen, we end up eating at home. Funny thing about eating at home: you save money and you eat a lot more healthfully.
I subscribed to eMeals a few years back, and ever since, we’ve been enjoying a variety of recipes that I didn’t have to come up with. I have a stockpile of favorite eMeals recipes (like the Burger-Topped Waffle Fries All the Way I mentioned in a previous post) that my family loves, and I love that I can change to a different menu plan anytime I want. eMeals Easy Breaded Baked Chicken + Greek Salad I Recipes
Today, with the permission of eMeals (thanks, eMeals!), I’m sharing our current favorite weeknight chicken recipe. It’s really easy to make, and everyone loves it.
It’s actually rolled crispy chicken, and my husband said it looked like something you’d get in a restaurant. He and a few of my boys are really picky, but they all loved this chicken and the accompanying Greek salad.
I swapped out the sour cream in the recipe for Greek yogurt to boost protein and reduce fat and calories. This chicken would also be really easy to toss in the air fryer. So delicious!
